Scotch bonnet vs habanero — they are not interchangeable

This tripped me up early on. Both look similar, both are hot, but the flavor profiles are completely different. Scotch bonnet has this fruity, almost apricot quality underneath the heat. Habanero is more floral and slightly citrusy. If you substitute one for the other in a Jamaican jerk, you will get something close but not right. Took me three batches to understand this.
