First time I made mole without being intimidated by the ingredient list

Mole has this reputation of being impossibly complex. After understanding the role of each component — dried chiles for depth, chocolate for roundness, nuts for body, spices for warmth — the ingredient list stopped being overwhelming and became a roadmap. Made a simplified red mole last weekend. It worked.
